Help! Gluten and Lactose-free recipes

I am inviting people over this weekend, and I need a couple of suggestions to cook for someone who is both gluten and lactose intolerant. Maybe you have some ideas? I am not into anything too elaborate, maybe some everyday ingredients you usually have in your pantry.

Thanks Celtic, again, for your help. I've pulled this little beauty for Sat night Slow-Cooked Chicken Dinner

It is an easy one, goes with the rice, and I plan to modify your Roasted Peppers recipe and use gluten free bread (a flat variety) brushed with olive oil and basil and crisped for the bedding.

No problem. Let me know how it comes off. I am open to a huge range of foods and cuisines so I'm always curious about how these dishes appeal to others. The pepper dish will certainly serve as a "kick in the pants" counterpoint to the chicken. Do you plan to serve the pepper dish before or after the main dish?

If it is planned as a long evening I would recommend serving the pepper dish quite early with cocktails (or beers) and then settling down later in the evening to the Chicken Entree.

The spiciness of the pepper dish will get the digestive juices flowing and then the savory chicken dish will serve to calm the digestive system down.

I'll let you know. I am not planning to use peppers/chillies, instead modify to a more Mediterranean flavour. (I know you are a chilli pepper fan). But then I might if it needs that kick. It will be my entree.
