Roasted Peppers stuffed with Tomatoes, Chilies, Olives, Garlic, and Capers, topped with Bacon. Served on Crostini with torn fresh Mozzarella, minced Chilies and Olive Oil.

Ahh, always a treat when Celtic cooks instead of Mrs Smith. Will garner this little beauty for the weekend - impress the guests:)~Ta

Use a variety of chilies and slice them very finely. The garlic also. You may not want to get a big piece of the hot chilies when you bite into a forkful. You should also taste them as you slice them so that you can gauge how much of each type of chili you should include. I used cherry tomatoes, halved, and mixed all the "filling" in a bowl with 2 tablespoons of white wine vinegar and 4 tbsp of olive oil, salt and pepper. Season the inside of the bell peppers and fill with the stuffing. Don't forget to pour the accumulated juices over the top of the peppers before topping with the bacon. Fold a piece of bacon over the top, cover with foil for the first 15 minutes in a 350 F oven and then uncover for about 15 - 20 more minutes. Check it every 10 minutes and remove when the bacon is crisp. Stick a sharp knife through the bottom of the peppers after they are plated on the crostini. This will allow the accumulated juices to seep through into the toasts. Eat these last with a bit of the mozzarella you have saved. The mozzarella is great to cool the palate if the chilies start to get the best of you.

These are all fresh chilies, now. Not the dried types! Enjoy. Even my chef son was loving them. He's not big on hot 'n spicy stuff.

I usually just toss my meal into a bowl -- this, I put out on a plate and to celebrate I took a picture. Roast chicken, boiled Yukon Gold potatoes and overcooked (to compensate for being a bit tough) green beans with cashews.
