I like it!

Made a new dish last night, powdered mashed potato mix prepared the usual way for the most part, w the addition w a can of corn and a pack of frozen garlic butter shrimp scampi (no tails) to the starting water. I also added a tub of garlic/herb creme cheese, and a fair amount of parsley and oregano near the end.

I topped it w Irish butter instead of gravy, but next time I plan a peppered slab bacon / chipotle gravy, w the chunks of bacon mixed into the potatoes.

Char-grilled chicken thigh fillets with Peri Peri seasoning, french beans, tomato salad, and rice.

Asparagus Panini - Grilled asparagus, portabello mushroom, prosciutto, mozzarella and roasted peppers with aoli. All pressed in a nice diagonal cut artisan bread.

I've been making a lot of basmati rice over here, along w spicy pork curry and fried tilapia (no breading).
